Chocolate Oatmeal Cookies
1/2 cup (1 stick) butter
1 cup sugar
1 egg
1 1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 oz. melted, cooled unsweetened baking chocolate
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup oatmeal
Cream together butter and sugar. Add egg, vanilla extract, almond extract, chocolate and mix well. Sift together flour, baking powder and salt. Stir flour into chocolate/butter mixture then stir in oatmeal. Form drop cookies about 1 Tablespoon size on lightly buttered cookie sheets and bake at 350° F. for 12 minutes or until there is no dark, shiny, wet chocolate look anywhere on them.
Makes: 2-1/2-3 dozen
