Chewy Chocolate Peanutbutter Cookies

2 cup all-purpose flour
3/4 cup Cocoa
1 tsp. baking soda
1/2 teaspoon salt
1-1/4 cup butter, softened
2-1/4 cup sugar
2 eggs
1 Tbsp. vanilla extract
10 oz. pkg. Peanut Butter M&Ms
2 cups chopped salted peanuts

Preheat oven to 350° F. Stir together flour, cocoa, baking soda and salt.
In large bowl, beat butter and sugar with electric mixer until light and fluffy. Add eggs and vanilla; beat well. Gradually add flour mixture, beating well. Stir in chips or M&Ms (if using). Roll rounded teaspoons of dough in chopped nuts & drop onto ungreased cookie sheet. Bake 8 to 9 minutes. (Do not over bake; cookies will be soft. They will puff while baking and flatten while cooling.)
If using peanut butter cups, push 1 cup into center of each cookie immediately after removing from oven. Cool slightly & carefully remove from cookie sheet to wire rack, taking care not to touch cups (they will be melting at this point). Cool completely.
About 4-1/2 dozen cookies.
