Scottish Oatmeal Scones
1 cup Oatmeal (Instant or Old Fashioned)
1-1/2 C all-purpose flour
1/2 cup Shortening (or butter) chilled and cut into small dice
1 cup firmly packed brown sugar
1/2 tsp. Baking Soda
1/2 cup Buttermilk (or 1/2 Cup milk and 1 Tbsp. vinegar added)
1/2 cup raisins
Combine all ingredients. Mix well with your fingers until well combined. Press (do not roll) with the hands on a floured board into long strips about 2" wide and 1/2" thick. Hack the strips with the back of a knife into deep ridges crosswise. Cut into 3" lengths and bake on an ungreased baking sheet in 325° F. oven or approximately 25 minutes.
Makes 10-12 scones.
