Double Peanutbutter Cookies
1 1/2 Cups flour
1/2 Cup shortening
1/4 Cup light corn syrup
1 1/2 Cup granulated sugar
1/2 cup creamy peanutbutter
1/2 tsp. baking soda
1/4 tsp. salt
1 tablespoon milk
Additional peanut butter
Sift together dry ingredients. Cut in shortening and peanutbutter until mixture resembles coarse meal. Blend in corn syrup and milk. Shape into 2 inch roll and chill well. Slice pieces 1/8 to 1/4 inch thick. Place half of the slices on ungreased cookie sheet. Spread each piece with 1/2 tsp. of peanut butter. Cover with remaining slices. Seal edges with fork. Bake at 350° F. for about 12 minutes. Cool slightly. Remove from cookie sheet.
Yield: 20 cookies.
