Carrot Casserole
2 lb carrots, peeled and sliced
3/4 lb butter or margarine, melted
1/2 lb cheese spread (like Velveeta), melted
1 tube snack crackers, crushed
Boil carrots in salted water until soft; drain. Mix cheese and butter with cooked carrots. Pour into a 2 quart casserole. Top with crushed crackers. Bake at 300° F for 20 minutes or until brown on top.
