Eggplant Whatever
Peel and slice 3 or 4 small eggplant. Salt and let set for 30 minutes. Pat dry. Put in a bag with whole wheat bread crumbs and shake until they are well covered. Placed under the broiler for 5-7 minutes on each side until they are browned.
In a casserole dish, pour some pizza sauce (or tomato sauce) place the eggplant slices, then put a thin layer of spinach. Add some more pizza sauce, then bread crumbs, then a thin layer of nutritional yeast. Put in oven and bake at 350° F. or 400° F. for about 20 minutes until warmed throughout.
