Peanut Butter Fudge
2 cups sugar
2 Tbsp. light corn syrup
1/2 cup milk
2 Tbsp. butter
1 Tbsp. cider vinegar
1/2 cup creamy style peanut butter
In a mixing bowl, mix everything except peanut butter. Cook over medium heat without stirring until soft ball stage( 234° F.) on candy thermometer, stirring occasionally (or until it forms a ball when you drop a little of it in cold water). Remove from heat and allow to cool about 5 minutes. With a wooden spoon, beat peanut butter in thoroughly and pour into an 8 in. square pan sprayed with non stick vegetable coating. (I line mine with wax paper) Cool completely before cutting into 1-inch squares.
