Microwave Peanut Brittle
1 cup sugar
1/2 cup light corn syrup
1 cup raw peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda
Combine sugar and corn syrup in Pyrex or glass microwave bowl. Stir some with a wooden spoon, it gets easier after it has cooked some. Cook in microwave on high for 2 min. Then stir well. Cook on high 2 more min. Stir. Add raw peanuts. Cook 1 min., stir.
Repeat for 3 to five minutes until light, golden color. Stir in butter, vanilla, and baking soda. It will foam up (this is what gives it the right texture), but stir until easy to do in the microwave, otherwise rather difficult or at least time consuming. Everything is well mixed. Stir well and quickly pour onto well greased, heat-proof platter or cookie sheet. You can leave it to cool and have thick brittle, or as it cools pull at the edges to thin it out.
