Fresh Apple Cake
4 cups diced Granny Smith apples
1/2 cup vegetable oil
2 sups granulated sugar
1 cup chopped nuts (optional)
2 eggs, slightly beaten
2 tsp. vanilla
2 cups flour
1 tsp. cinnamon
1 tsp. salt
2 tsp. baking soda
Mix apples and sugar well. Stir in oil, nuts, eggs, and vanilla. Add dry ingredients and mix well. Pour into a 9 x 13 cake pan. Bake at 350° F. for 1 hour, occasionally needs some extra time. Test with a toothpick or knife for doneness. Serve warm with ice cream or cold with whipped topping.
Serves 12, depending on the size of your pieces.
