Omelet
1 egg
2 egg whites
1/4 teaspoon salt
1 teaspoon vegetable oil
In small bowl, whisk together egg, egg whites, 1 tablespoon water and the salt. Preheat broiler; place broiler rack 4 inches from heat. In 6-inch flameproof nonstick skillet, heat oil over medium-high heat. Pour in egg mixture, pulling the sides of the omelet in towards the center as the edges cook. When the bottom is set, run the pan under the broiler for 30 seconds to cook the top. Fold in half and turn out onto serving plate.
