Southwest Quiche
1 pastry shell (10 inch)
6 sausages, cut in 1/4-inch slices
1 medium onion, chopped
9 eggs, lightly beaten
1/2 cup half and half
1/2 cup shredded cheddar cheese
1(14 oz.) can artichoke bottoms, drained, chopped
1(8.5 oz.) can cream-style corn
1(4 oz.) can chopped green chilies, chopped
Position pastry into a 10-inch quiche pan or 10-inch pie plate. Set aside. In a skillet sprayed with non-stick cooking spray, brown sausage and onion over medium heat until onions are transparent. In a large mixing bowl, combine sausage mixture with remaining ingredients; stir until blended. Pour mixture into pastry shell. Bake at 375° F. for 40-45 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before cutting.
