Huevos Rancheros

2 cups chopped tomatoes
8 oz. drained cooked black beans
1/2 cup minced red onion
1/2 cup thawed frozen corn
kernels 2 cup minced fresh cilantro
1/2 tsp. salt
1 tsp. chopped deveined seeded
jalapeno pepper (wear gloves to prevent irritation)
4 eggs
3 oz. nonfat tortilla chips

In large skillet, combine tomatoes, beans, onion, corn, cilantro, pepper and salt; bring liquid to a boil. Reduce heat to low; simmer, covered, 10 minutes, until flavors are blended and mixture is heated through. Meanwhile, in another large skillet, poach eggs. Divide tomato mixture evenly among 4 plates. Top each portion of tomato mixture with 1 poached egg; surround each with 3/4 ounce tortilla chips.
Makes 4 servings

SERVING (1 EGG, 3/4 CUP TOMATO MIXTURE, 3/4 OUNCE CHIPS) PROVIDES: 1 1/4 Vegetables, 2 Proteins, 1 Bread.
