Scannels' Soda Bread
1 1/2 C Whole wheat pastry flour
1 cup Oat bran
1 1/2 tsp. Baking powder
1/4 tsp. Baking soda
1/4 tsp. Salt
1 Tbsp. Sugar or other sweetener
2 Tbsp. Caraway seeds
1/4 cup Raisins or currants
1 cup Potato or soy milk
1 Tbsp. Lemon juice
Mix milk and lemon juice and set aside. Mix dry ingredients well, then blend in caraway seeds and currants. Add milk stirring to make a stiff dough. Turn into a lightly floured board and knead for 1 minute. Shape into a round loaf and put into a greased 8" round pan. With a floured knife, cut a cross into the top. Bake at 350° F. for 40 minutes or until lightly browned. Cut into slices crosswise when cooled.
