Spicy Lentil Dip/Salad

1 pound dry lentils
1/2 cup finely sliced carrots
1/2 cup chopped tomatoes
1 Pkg Hidden Valley Ranch Party Dip Mix
1/8 cup soy sauce (or to taste)
1/8 cup lemon juice (to taste)
1-1/2 Tablespoons cumin
Black pepper
Cayenne pepper
Salt
Optional additions: finely chopped green onions and/or cilantro

Cook lentils until very soft. While hot, pour lentils into a mixing bowl and add salt, lemon juice, soy sauce, cumin, cayenne pepper (to taste or optional), black pepper and 1 package of Ranch Mix Party Dip. Mix together with carrots and tomatoes and refrigerate.
