Apple Beans
2 (15-oz.) cans dark red kidney beans, drained
3 (16-oz.) cans pork and beans
1 (15-oz.) can diced tomatoes in a rich puree
2-pounds bulk pork sausage, browned & drained, reserving drippings
1 Walla Walla onion, chopped and sautéed in 2 Tbsp. of sausage drippings
2 cloves garlic
1 cup brown sugar, packed
2 Red Delicious apples, shredded
1 teaspoon chili powder
1 teaspoon salt
Combine all ingredients in a covered dish. Bake for 2 hours at 350° F.
