Hot Poppers
1 1/2 onion
3 Tbsp. margarine
1 1/2 cups mashed potatoes
3 cups cooked brown rice
3 Tbsp. tomato paste
1 1/2 tsp. salt
1 1/2 cups whole grain bread crumbs
1 tsp. minced garlic
1 1/2 tsp. black pepper
4 chopped jalapeno peppers
Preheat oven to 350° F. Sauté onions in the margarine. Combine all ingredients and form 1 1/2" balls. Bake for 15 - 20 minutes or golden brown. Makes about 36 balls.
