Spanakopita - Greek Spinach Pie
2-3 lb. of fresh Spinach washed, dried, chopped
2-3 large Onions, chopped
16 oz. Cottage Cheese
1/2-3/4 lb. of Butter
3/4 to 1 lb. of Feta Cheese (crumbled)
3 Eggs
1 tsp. Salt
Pepper to taste
1 Package of Filo Dough
Parsley
In a large skillet, sauté onions in some butter or olive oil. Add spinach and salt and pepper and continue to sauté until spinach wilts. Put aside to cool.
Meanwhile, in a large bowl beat eggs then add Feta and Cottage Cheeses. Add Pepper and Parsley and mix well. After spinach mixture cools and the cheese mixture to it.
Melt one stick of butter In a 9x12 baking pan or larger, butter bottom of pan then add a sheet of filo and brush it with melted butter. Repeat this over and over until you have 7 or 8 sheets. If you run out of butter - melt another stick.
Next, add spinach mixture to evenly cover pan. Repeat filo and butter sequence until another 7 or 8 sheets are on top. Bake in 350° F. oven for 45 minutes to 1 hour and 15 minutes depending on your oven and the size pan you are using. Pie should have a golden color when done. Let cool, cut into squares and serve.
Serves 15 - 20 people as a side dish or appetizer.
